Plenty, a new cookbook for vegetable lovers

This may be one of the most intriguing cookbooks I’ve come across in a while. The artwork on the cover and interior pages is ultra simple, clean and whimsical. Like the food.

The photos are positively luscious, and I’ve made a couple of the salads. Here’s the short list:

pg 146, lettuce salad, (lovely and amazing)
pg 166, cucumber ginger salad
pg 196, green bean salad
pg 214, fried butter beans (yes, fried)
pg 245, quinoa salad with dried lime (had no dried lime, added a splash of lime juice), lovely and tasty
pg 252, crunchy papparadelle
pg 266, corn aubergine polenta (can’t wait to have this with fresh fresh fresh veg)
